1. Why This Recipe Works Every Time
In my test kitchen, I’m always looking for dinners that make you feel like you’ve pulled off something special without breaking a sweat. These mini baked chicken tacos are my weeknight secret — they’re ready in the time it takes to pour a glass of wine and set the table.
What makes them work every time? It’s the high heat that crisps the tortillas while the cheese melts into the chicken, creating a little parcel of joy. No frying, no mess, just pure flavor that has my family asking for them again and again.

🛒 Ingredients (Check Off As You Measure)
🍳 Step-by-Step Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a baking sheet or line it with parchment paper.
- In a bowl, toss the shredded chicken with olive oil, chili powder, cumin, garlic powder, and smoked paprika until well coated.
- Lay the mini tortillas on the baking sheet. Spoon about 2 tablespoons of seasoned chicken onto one half of each tortilla, then sprinkle with cheese.
- Fold the other half over the filling to create a taco shape, pressing gently. Arrange them so they don't overlap.
- Bake for 8-10 minutes, until the tortillas are golden and crispy and the cheese is melted. Serve warm with salsa and a sprinkle of cilantro.
👩🍳 Chef Elena’s Kitchen Notes & Storage
For extra crispiness, brush the outside of the tortillas with a little olive oil before baking. These are best fresh, but you can store leftovers in an airtight container in the fridge for up to 3 days — reheat in the oven to bring back the crunch.
