Cucumber Feta Salad
- 4 cups cucumber slices (English or Persian cucumbers work best)
- 1 cup cherry tomatoes, halved
- 1/4 cup thinly sliced red onion
- 1/2 cup crumbled feta cheese

- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 tablespoon red wine vinegar

Instructions
- In a large bowl, combine cucumber slices, cherry tomatoes, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, salt, and pepper.
- Serve immediately or chill for 20–30 minutes before serving for best flavor.
