Cookie Dough:
- ½ cup unsalted butter, softened
- ½ cup brown sugar, packed
- ¼ cup granulated sugar

- 1 teaspoon vanilla extract
- ½ cup apple butter
- 1¾ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg

- ¼ cup chopped walnuts or pecans
Instructions
- Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Cream butter and sugars: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add wet ingredients: Beat in the egg and vanilla extract, then mix in the apple butter until well combined.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture and stir until a soft dough forms. Fold in nuts if using.
- Bake: Drop tablespoon-sized scoops of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes, or until the edges are set and the centers are soft.
- Cool and serve: Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- These cookies stay soft thanks to the apple butter.
- Store in an airtight container at room temperature for up to 4 days.
