Ingredients
Scale
Apple Filling
- 1 1/2 cups apples, peeled and diced
- 1 tablespoon lemon juice
- 2 tablespoons granulated sugar
- 1/2 teaspoon ground cinnamon
Cookie Dough
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Toppings (Optional)
- 1/2 cup caramel sauce
- Vanilla ice cream
Instructions
- Preheat the oven: Set your oven to 350 degrees F to prepare it for baking the skillet cookie.
- Prepare the apples: In a small bowl, toss the peeled and diced apples with lemon juice, 2 tablespoons of sugar, and 1/2 teaspoon cinnamon. This mixture infuses the apples with warm spice and prevents browning.
- Cream the butter and sugars: In a large bowl, beat together the softened unsalted butter, packed brown sugar, and granulated sugar until the mixture is light and fluffy, which adds airiness to the cookie dough.
- Add egg and vanilla: Beat in the egg and vanilla extract until fully combined to provide structure and flavor to the dough.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg for even distribution of leavening and spices.
- Make the dough: Gradually add the dry ingredients into the wet ingredients, mixing until a soft cookie dough forms.
- Prepare the skillet: Lightly grease a 10-inch oven-safe skillet to prevent sticking and ensure even cooking.
- Layer the dough and apples: Press about two thirds of the cookie dough evenly into the bottom of the skillet. Spread the prepared apple mixture evenly over this dough. Crumble the remaining dough over the top of the apples for a rustic finish.
- Bake: Place the skillet in the oven and bake for 30 to 35 minutes until the cookie is golden brown and cooked through.
- Cool and serve: Remove the skillet from the oven and allow the dessert to cool slightly before drizzling with caramel sauce if desired. Serve warm with a scoop of vanilla ice cream.
Notes
- Granny Smith or Honeycrisp apples are recommended for their ability to hold shape and balance sweet and tart flavors.
- For extra texture and nutty flavor, add chopped pecans or walnuts to the apple layer before baking.
