Potatoes:
- 1½ pounds baby potatoes (halved)
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
Toppings:
- 1 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- Zest of 1 lemon (optional)
- Chili flakes to taste (optional)
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss potatoes: In a large bowl, toss the halved potatoes with olive oil, oregano, garlic powder, salt, and pepper until evenly coated.
- Roast potatoes: Spread the potatoes in a single layer on the baking sheet, cut side down. Roast for 25–30 minutes until golden and tender, flipping halfway through for even browning.
- Add feta: Remove from the oven and sprinkle with crumbled feta. Return to the oven for 5 more minutes to soften the cheese slightly.
- Finish and serve: Transfer to a serving dish and top with parsley, lemon zest, and chili flakes if desired. Serve hot.
