  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Toppings:

  • 1 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • Zest of 1 lemon (optional)
  • Chili flakes to taste (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss potatoes: In a large bowl, toss the halved potatoes with olive oil, oregano, garlic powder, salt, and pepper until evenly coated.
  3. Roast potatoes: Spread the potatoes in a single layer on the baking sheet, cut side down. Roast for 25–30 minutes until golden and tender, flipping halfway through for even browning.
