Cauliflower Fritters:

  • 1 medium head cauliflower (about 1½ pounds, cut into florets)
  • 2 large eggs

  • 2 green onions (thinly sliced)
  • 1 clove garlic (minced)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika (optional)

Instructions

  1. Prepare Cauliflower: Steam or boil the cauliflower florets until tender, about 8–10 minutes. Drain well and mash with a fork or potato masher until chunky. Let cool slightly.

  3. Cook Fritters: Heat oil in a skillet, scoop batter into the skillet, flatten slightly, and cook for 3–4 minutes per side until golden brown and crisp. Transfer to a paper towel-lined plate and repeat.
