  • Salt and freshly ground black pepper
  • 3 tablespoons all-purpose flour
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil

  • 4 slices bacon, finely chopped
  • 3 large onions, thinly sliced
  • 3 garlic cloves, minced
  • 500 ml (2 cups) dark Belgian ale
  • 250 ml (1 cup) beef stock
  • 2 tablespoons brown sugar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons red wine vinegar
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven: Preheat oven to 163°C (325°F).
  2. Prepare the beef: Season beef cubes with salt and pepper, then coat evenly in flour.
  3. Brown the beef: Brown the beef in batches in a Dutch oven.
  4. Cook the bacon: Cook bacon until crisp, then remove and set aside.
  5. Caramelize onions: Cook onions in remaining fat until deeply caramelized.
  6. Deglaze the pot: Add garlic and half the beer to deglaze the pot.
  7. Add remaining ingredients: Return beef and bacon to the pot along with remaining beer, beef stock, and seasonings.
  8. Braise in the oven: Cover and braise in the oven for about 1½ hours.
  9. Finish and serve: Adjust seasoning, garnish with parsley, and serve hot.
