Description

  • 1 1/2 cups oat flour
  • 1/2 cup vanilla protein powder
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/4 cup almond butter or cashew butter
  • 1/4 cup maple syrup or honey
  • 1/4 cup unsweetened almond milk (plus more if needed)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional, for cake flavor)
  • 2 tablespoons rainbow sprinkles
  • 12 tablespoons white chocolate chips (optional)
  • additional sprinkles for topping (optional)

Instructions

  1. Dry Ingredients: In a large bowl, whisk together oat flour, protein powder, and salt.
  2. Wet Ingredients: In a separate bowl, mix almond butter, maple syrup, almond milk, vanilla extract, and almond extract until smooth.

    Pour the wet mixture into the dry ingredients and stir until a thick dough forms. Fold in rainbow sprinkles and white chocolate chips if using. If the dough is too dry, add a splash more almond milk.

  3. Press Into Pan: Press the mixture evenly into a parchment-lined 8×8-inch pan. Top with extra sprinkles and gently press them into the surface.
  4. Chill: Refrigerate for at least 1 hour until firm. Slice into bars and store in an airtight container in the fridge.
