These Birthday Cake Protein Bars are a delightful and nutritious treat that is easy to make and perfect for snacking. Packed with protein and a burst of funfetti flavor, these bars are sure to be a hit for any celebration or post-workout fuel.
Ingredients
Dry Ingredients:
- 1 1/2 cups oat flour
- 1/2 cup vanilla protein powder
- 1/4 teaspoon salt
Wet Ingredients:
- 1/4 cup almond butter or cashew butter
- 1/4 cup maple syrup or honey
- 1/4 cup unsweetened almond milk (plus more if needed)
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional, for cake flavor)
- 2 tablespoons rainbow sprinkles
- 1–2 tablespoons white chocolate chips (optional)

Instructions
- Dry Ingredients: In a large bowl, whisk together oat flour, protein powder, and salt.
- Press Into Pan: Press the mixture evenly into a parchment-lined 8×8-inch pan. Top with extra sprinkles and gently press them into the surface.
- Chill: Refrigerate for at least 1 hour until firm. Slice into bars and store in an airtight container in the fridge.
Wet Ingredients: In a separate bowl, mix almond butter, maple syrup, almond milk, vanilla extract, and almond extract until smooth.
Pour the wet mixture into the dry ingredients and stir until a thick dough forms. Fold in rainbow sprinkles and white chocolate chips if using. If the dough is too dry, add a splash more almond milk.

- For a firmer texture, freeze the bars for 15–20 minutes before serving.
- Use dairy-free protein powder and chips for a vegan version.
