For the Crust:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cut into cubes
For the Blueberry Curd:
- 2 cups fresh or frozen blueberries
- 2/3 cup granulated sugar
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1/8 teaspoon salt
- 4 large egg yolks
- 1/4 cup unsalted butter, cut into pieces
Instructions
- Preheat the oven and prepare the crust: Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper. In a medium bowl, combine flour and sugar. Cut in the cold butter until mixture resembles coarse crumbs. Press firmly into the pan to form a crust. Bake for 18–20 minutes.
- Make the blueberry curd: Combine blueberries, sugar, lemon juice, lemon zest, and salt in a saucepan. Cook until berries break down. Puree, strain, then whisk in egg yolks. Cook until thickened. Remove from heat and stir in butter.
- Assemble and bake: Pour the curd over the crust and spread evenly. Bake for 10–12 minutes until set. Cool completely, then refrigerate for at least 2 hours before slicing into bars.
Notes
- Bars can be made up to 2 days in advance and stored in the refrigerator.
- Garnish with fresh blueberries or powdered sugar before serving if desired.
- For a firmer curd, cook a few extra minutes before adding to the crust.
