Description

Indulge in the delightful combination of a buttery crust and a tangy blueberry curd in these delicious Blueberry Curd Bars. Perfect for a summer dessert or any time you’re craving a fruity treat!

Ingredients

Scale

For the Crust:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cut into cubes

For the Blueberry Curd:

  • 2 cups fresh or frozen blueberries
  • 2/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1/8 teaspoon salt
  • 4 large egg yolks
  • 1/4 cup unsalted butter, cut into pieces

Instructions

  1. Preheat the oven and prepare the crust: Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper. In a medium bowl, combine flour and sugar. Cut in the cold butter until mixture resembles coarse crumbs. Press firmly into the pan to form a crust. Bake for 18–20 minutes.
  2. Make the blueberry curd: Combine blueberries, sugar, lemon juice, lemon zest, and salt in a saucepan. Cook until berries break down. Puree, strain, then whisk in egg yolks. Cook until thickened. Remove from heat and stir in butter.
  3. Assemble and bake: Pour the curd over the crust and spread evenly. Bake for 10–12 minutes until set. Cool completely, then refrigerate for at least 2 hours before slicing into bars.

Notes

  • Bars can be made up to 2 days in advance and stored in the refrigerator.
  • Garnish with fresh blueberries or powdered sugar before serving if desired.
  • For a firmer curd, cook a few extra minutes before adding to the crust.
