Marinated Chicken:
- 2 pounds bone-in chicken pieces (legs, thighs, or mixed)
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder

- ½ teaspoon ground allspice
- 2 tablespoons soy sauce
Stew:
- 2 tablespoons vegetable oil
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1–2 Scotch bonnet peppers, seeded and chopped (adjust to spice preference)
- 2 medium tomatoes, chopped
- 2 sprigs fresh thyme
- 2 cups chicken broth
- 2 carrots, sliced
- 1 bell pepper, sliced
- 2 tablespoons ketchup
- 1 tablespoon brown sugar
Instructions
- Marinate Chicken: Season chicken with salt, pepper, paprika, garlic powder, onion powder, allspice, and soy sauce. Marinate for at least 1 hour, preferably overnight.
- Brown Chicken: Heat vegetable oil in a large pot. Brown chicken on all sides, then set aside.
- Sauté Aromatics: In the same pot, sauté onion, garlic, ginger, and Scotch bonnet peppers until fragrant.
- Add Ingredients: Add tomatoes, thyme, chicken, broth, carrots, bell pepper, ketchup, and brown sugar. Stir well.
- Simmer: Bring to a boil, then reduce heat, cover, and simmer for 35–40 minutes until chicken is tender.
- Adjust and Serve: Adjust seasoning to taste before serving. Enjoy with rice and peas or white rice.
