Description

Pasta Salad

  • 12 ounces pasta such as rotini or penne
  • 2 cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella balls (bocconcini), halved
  • 1/2 cup fresh basil leaves, torn

Dressing

  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano (optional)
  • 1 tablespoon honey (optional)


Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water to stop cooking and cool the pasta.
  2. Make the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, minced garlic, salt, black pepper, dried oregano, and honey if using until the mixture is well combined and emulsified.
  3. Combine ingredients: In a large bowl, add the cooled pasta, halved cherry tomatoes, halved mozzarella balls, and torn basil leaves. Pour the dressing over the ingredients and toss gently to evenly coat everything with the dressing.
