- 1/2 cup heavy cream

Instructions
- Prepare the Onions: Heat olive oil and butter in a large skillet over medium heat. Add sliced onions and cook slowly, stirring often, until deeply caramelized, about 30–40 minutes.
- Make the Sauce: Stir in minced garlic and chili oil, cooking for 1–2 minutes until fragrant. Pour in heavy cream and stir until combined, then mix in Parmesan cheese and Italian seasoning.
- Cook the Pasta: Bring a large pot of salted water to a boil and cook pasta until al dente; reserve 1/2 cup pasta cooking water before draining.
- Combine and Serve: Add pasta to the skillet with the sauce, tossing to coat. Add reserved pasta water a little at a time until sauce reaches desired consistency. Season with salt and pepper. Serve immediately, topped with extra Parmesan, parsley, and a drizzle of chili oil if desired.

- For a vegan version, replace heavy cream with coconut cream or oat cream and use vegan Parmesan.
