Description

Indulge in the rich flavors of this Caramelized Onion Pasta with Chili Oil, a delectable dish that combines the sweet essence of caramelized onions with a kick of spicy chili oil, all brought together in a creamy sauce over perfectly cooked pasta.

Ingredients

Scale

For the Pasta:

  • 1 pound spaghetti or linguine

For the Sauce:

  • 3 large yellow onions (thinly sliced)
  • 3 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 4 cloves garlic (minced)
  • 2 tablespoons chili oil (plus more for drizzling)
  • 1/2 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese (plus extra for serving)
  • 1/2 teaspoon Italian seasoning
  • kosher salt and black pepper to taste
  • fresh parsley (chopped, for garnish)

Instructions

  1. Prepare the Onions: Heat olive oil and butter in a large skillet over medium heat. Add sliced onions and cook slowly, stirring often, until deeply caramelized, about 30–40 minutes.
  2. Make the Sauce: Stir in minced garlic and chili oil, cooking for 1–2 minutes until fragrant. Pour in heavy cream and stir until combined, then mix in Parmesan cheese and Italian seasoning.
  3. Cook the Pasta: Bring a large pot of salted water to a boil and cook pasta until al dente; reserve 1/2 cup pasta cooking water before draining.
  4. Combine and Serve: Add pasta to the skillet with the sauce, tossing to coat. Add reserved pasta water a little at a time until sauce reaches desired consistency. Season with salt and pepper. Serve immediately, topped with extra Parmesan, parsley, and a drizzle of chili oil if desired.

Notes

  • For a vegan version, replace heavy cream with coconut cream or oat cream and use vegan Parmesan.
  • For extra heat, increase chili oil or add red pepper flakes.
