For the carrot cake layer:

For the cheesecake layer:
- 2 (8 oz) packages cream cheese (softened)
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
For the frosting (optional):
- 1/2 cup cream cheese (softened)
- 2 tablespoons butter (softened)
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Line the bottom of a 9-inch springform pan with parchment paper and grease the sides.
- Prepare carrot cake layer: Mix dry ingredients in a bowl, then combine wet ingredients. Fold in carrots, pineapple, and walnuts. Set aside.
- Prepare cheesecake layer: Beat cream cheese and sugar until smooth. Add eggs and vanilla.
- Layer the batter: Pour half of the carrot cake batter, add cheesecake batter, then top with remaining carrot cake batter.
- Bake: Bake for 55–65 minutes until set. Cool, then chill for at least 4 hours.
- Optional frosting: Beat cream cheese, butter, powdered sugar, and vanilla. Spread over chilled cheesecake.
