- 1 medium onion (finely chopped)
- 3 garlic cloves (minced)
- 1-inch piece fresh ginger (grated)
- 2 medium tomatoes (chopped)
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon garam masala
- 1 teaspoon turmeric
- ½ teaspoon chili powder
- ½ teaspoon ground cinnamon (optional)
- 1 (15 oz) can chickpeas (drained and rinsed)
- ½ cup water
- salt to taste
- juice of ½ lemon
- fresh cilantro for garnish

- Heat the oil in a large skillet or saucepan over medium heat. Add the chopped onions and sauté until golden brown, about 6–8 minutes.
- Stir in the garlic and ginger and cook for another minute until fragrant.
- Add the chopped tomatoes and cook for 5 minutes until they break down.
- Stir in the spices – cumin, coriander, turmeric, chili powder, cinnamon, and garam masala. Cook for 1–2 minutes.
- Add the chickpeas and water, stirring to coat. Simmer for 10–15 minutes.
- Season with salt and stir in lemon juice. Garnish with cilantro and serve hot.
Notes
- For a creamier texture, mash a few chickpeas while simmering.
- This dish can be made ahead and tastes even better the next day.
- Add a splash of coconut milk for a richer variation.
