Ground Beef Mixture:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies)
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup shredded cheddar cheese

Additional Ingredients:

  • 2 cups shredded cheddar cheese, divided
  • 1 (32 oz) bag frozen tater tots
  • Nonstick cooking spray

Instructions

  1. Preheat and Prepare: Preheat the oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Cook Ground Beef: In a skillet, cook the ground beef and onion until browned. Drain excess fat. Season with garlic powder, salt, and pepper. Add Rotel and cream of mushroom soup. Stir in 1 cup of cheddar cheese.
  3. Assemble: Spread the beef mixture in the baking dish. Top with tater tots in a single layer. Sprinkle remaining cheddar cheese over the top.
  4. Bake: Bake uncovered for 35–40 minutes until tater tots are crispy and cheese is melted.
  5. Serve: Let it rest for 5 minutes before serving.
