Instructions

  1. Cream Cheese Filling: In a medium bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Assembly: Place an egg roll wrapper on a clean surface with one corner facing you. Spread about 1 tablespoon of cream cheese mixture across the center, then top with 1 heaping tablespoon of cherry pie filling. Fold the bottom corner over the filling, fold in both sides, and roll tightly, sealing the edge with a dab of water. Repeat with remaining wrappers and filling.
  3. Frying: Heat 1–2 inches of oil in a deep skillet or saucepan to 350°F (175°C). Fry egg rolls in batches for 2–3 minutes per side, until golden brown and crispy. Remove to a paper towel-lined plate to drain. Serve warm, dusted with powdered sugar if desired.
