Instructions

  2. Tenderize Chicken: Place each chicken breast between two sheets of plastic wrap and gently pound with a meat mallet or rolling pin until about 1-inch thick to ensure even cooking.
  3. Prepare Breading Stations: Set up three separate bowls: one with flour seasoned with salt and pepper, the second with beaten eggs, and the third with Italian breadcrumbs.
  4. Coat Chicken: Dredge each chicken breast first in the seasoned flour, then dip into the beaten eggs, and finally coat thoroughly with Italian breadcrumbs to create a crisp crust.
  5. Fry Chicken: Heat 2 tablespoons of olive oil in a skillet over medium heat. Once hot, fry the breaded chicken breasts for about 4-5 minutes on each side until golden brown and cooked through.
