Ingredients
Scale
Chicken and Breading
- 3-4 boneless, skinless chicken breasts
- 1 cup Italian breadcrumbs
- Salt and pepper to taste
- Flour (for coating, amount as needed)
- 2 eggs (beaten)
Sauce and Cheese
- 1 cup marinara sauce
- 8 oz fresh mozzarella cheese, sliced
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil leaves
Other
- 2 tbsp olive oil
- Sub rolls (for serving)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
- Tenderize Chicken: Place each chicken breast between two sheets of plastic wrap and gently pound with a meat mallet or rolling pin until about 1-inch thick to ensure even cooking.
- Prepare Breading Stations: Set up three separate bowls: one with flour seasoned with salt and pepper, the second with beaten eggs, and the third with Italian breadcrumbs.
- Coat Chicken: Dredge each chicken breast first in the seasoned flour, then dip into the beaten eggs, and finally coat thoroughly with Italian breadcrumbs to create a crisp crust.
- Fry Chicken: Heat 2 tablespoons of olive oil in a skillet over medium heat. Once hot, fry the breaded chicken breasts for about 4-5 minutes on each side until golden brown and cooked through.
- Assemble for Baking: Place the fried chicken breasts on the prepared baking sheet. Spoon marinara sauce evenly over each piece, then layer slices of fresh mozzarella and sprinkle grated Parmesan on top.
- Bake: Place the baking sheet in the preheated oven and bake for approximately 20 minutes, or until the cheese is bubbly and slightly browned.
- Serve: Remove from oven and transfer each chicken breast into a sub roll. Garnish with fresh basil leaves before serving for a fragrant and fresh finish.
Notes
- You can substitute Italian breadcrumbs with panko for extra crunch.
- If you prefer, use pre-cooked chicken cutlets to reduce frying time.
- Fresh basil adds a bright flavor; however, you can also use dried basil or omit if unavailable.
- Monitor the cheese while baking to prevent over-browning.
- Serve with a side salad or chips for a complete meal.
