For the Spinach Alfredo Sauce:
- 2 tablespoons butter
- 2 cloves garlic (minced)
- 2 cups baby spinach (chopped)
- 1 1/2 cups heavy cream
- 3/4 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg
- Salt and pepper to taste
Instructions
- Prepare the Meatballs: In a large bowl, combine ground chicken, ricotta, Parmesan, breadcrumbs, egg, garlic, parsley, salt, and pepper. Roll into meatballs.
- Sear the Meatballs: Brown meatballs in olive oil in a skillet. Set aside.
