This Chicken, Sausage, Peppers, and Potatoes recipe is a hearty and flavorful one-pan meal that combines tender chicken, savory Italian sausage, colorful bell peppers, and crispy potatoes seasoned with herbs and spices. It’s an easy and satisfying dish perfect for a family dinner.

Ingredients

Chicken:

1 pound boneless, skinless chicken thighs (cut into chunks)

Sausage:

½ pound Italian sausage (sliced or crumbled)

Potatoes:

3 medium potatoes (diced)

Bell Peppers:

1 red, 1 yellow, and 1 green bell pepper (sliced)

Onion:

1 medium onion (sliced)

Olive Oil:

3 tablespoons

Seasonings:

1 teaspoon garlic powder, 1 teaspoon dried oregano, ½ teaspoon paprika, salt and black pepper to taste

Garnish:

Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and lightly grease a large baking dish or sheet pan.
  2. Prepare the ingredients: In a large bowl, combine the chicken, sausage, potatoes, bell peppers, and onion. Drizzle with olive oil, add the seasonings, and toss to coat.
  3. Bake: Spread the mixture in a single layer in the baking dish. Bake for 45–50 minutes, stirring halfway through, until potatoes are tender and meat is cooked through.
  4. Optional: Broil for 2–3 minutes for browning. Garnish with fresh parsley before serving.
