Description

A delightful Chinese Chicken Salad featuring a colorful mix of shredded cabbage, carrots, bell pepper, and chicken, all tossed in a flavorful sesame dressing and topped with crunchy almonds and chow mein noodles.


Ingredients

Salad:

  • 3 cups cooked shredded chicken (rotisserie or poached)
  • 4 cups shredded Napa cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1/2 cup sliced green onions
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sliced almonds, toasted
  • 1 cup crispy chow mein noodles or wonton strips

Dressing:

  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 2 tablespoons vegetable oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon sriracha or chili paste (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare Salad: In a large mixing bowl, combine the shredded chicken, Napa and red cabbage, carrots, bell pepper, green onions, and cilantro.
  2. Make Dressing: In a separate small bowl or jar, whisk together rice vinegar, soy sauce, sesame oil, honey, vegetable oil, ginger, garlic, and sriracha until well blended. Adjust seasoning with salt and pepper.
  3. Toss and Serve: Pour the dressing over the salad and toss until evenly coated. Just before serving, sprinkle with almonds and crispy noodles. Serve immediately.

Notes

  • For a vegetarian version, omit the chicken and add edamame or baked tofu.
  • You can prep the salad and dressing ahead of time and toss just before serving.
