Featuring a rich brownie base topped with creamy homemade cookie dough and smooth vanilla ice cream, finished with a drizzle of chocolate fudge and optional whipped topping, this dessert is perfect for summer or any time you crave a cool, chocolatey treat.

Ingredients

Scale

Brownie Layer

  • 1 box brownie mix, prepared according to package directions for a 9×13-inch pan

Cookie Dough Layer

  • 1/2 cup unsalted butter, softened
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 cup heat-treated all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup mini chocolate chips

Ice Cream Layer

  • 1 1/2 quarts vanilla ice cream, softened

Toppings

  • 1 cup chocolate fudge sauce
  • 1/2 cup whipped topping (optional)

Instructions

  1. Prepare Brownies: Preheat the oven and prepare the brownie mix according to the package directions. Bake in a 9×13-inch pan until set. Once baked, allow the brownies to cool completely before proceeding.
  2. Make Cookie Dough: In a mixing bowl, beat the softened butter, light brown sugar, and granulated sugar together until creamy and smooth. Add the milk and vanilla extract and mix well. Gradually stir in the heat-treated all-purpose flour and salt until a soft dough forms. Fold in the mini chocolate chips evenly.
  3. Assemble Layers: Spread the cookie dough evenly over the cooled brownie layer in the pan. Next, spread the softened vanilla ice cream evenly over the cookie dough layer to create a smooth top surface.
  4. Add Fudge Sauce: Drizzle the chocolate fudge sauce over the ice cream layer. Gently swirl the fudge into the ice cream if desired to create a marbled effect.
  5. Freeze Bars: Cover the pan tightly with plastic wrap or foil and freeze for at least 4 hours, or until the ice cream layer is firm and set.
  6. Slice and Serve: Remove from the freezer and slice into 12 bars. For cleaner slices, heat a knife under hot water and wipe dry before slicing. Optionally, top each bar with whipped topping before serving.

Notes

  • For cleaner slices, freeze the bars overnight and use a knife warmed under hot water to cut.
  • Heat-treat the flour before use by microwaving it until it reaches a safe temperature to avoid any potential bacteria.
  • You can substitute chocolate chip cookie dough ice cream for the vanilla ice cream layer for added flavor and texture.
