Ganache

- Chill & Scoop: Refrigerate the cookie dough for 30 minutes to firm up and reduce spreading during baking. Once chilled, use a cookie scoop to evenly portion the dough onto a baking sheet lined with parchment paper or a silicone mat.
- Bake: Preheat your oven to 350°F (175°C). Bake the cookies for 10 to 12 minutes, or until the edges are set while the centers remain soft and fudgy. Allow the cookies to cool slightly on the baking sheet.
- Make Ganache: Heat the heavy cream until it just begins to simmer. Pour the hot cream over the semi-sweet chocolate chips in a heatproof bowl. Let sit for a minute, then stir gently until the mixture becomes smooth, shiny, and well combined into a ganache.
