Delicious and healthy Cowboy Caviar Stuffed Avocados are a perfect appetizer or light meal. Creamy avocados are filled with a zesty mix of black beans, corn, tomatoes, and spices for a Tex-Mex twist.

Avocado:
- 3 ripe avocados, halved and pitted
Cowboy Caviar:
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn kernels (fresh, canned, or thawed from frozen)
- 1/2 cup cherry tomatoes, diced
- 1/4 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup chopped fresh cilantro
- 1 jalapeño, seeded and minced
- 1 tablespoon olive oil
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- Salt and pepper to taste
Instructions
- Mix Cowboy Caviar: In a medium bowl, combine black beans, corn, cherry tomatoes, red bell pepper, red onion, cilantro, and jalapeño.
- Prepare Dressing: In a small bowl, whisk together olive oil, lime juice, chili powder, cumin, salt, and pepper.
- Toss: Pour the dressing over the veggie mixture and toss well to coat.
- Fill Avocados: Spoon the cowboy caviar into the centers of each avocado half, mounding it over the top.
- Serve: Serve immediately with extra lime wedges if desired.
Notes
- For extra protein, add diced grilled chicken or shrimp to the filling.
- This recipe is best served fresh but can be prepped ahead by storing the cowboy caviar separately and assembling just before serving.
