Description

Delicious and healthy Cowboy Caviar Stuffed Avocados are a perfect appetizer or light meal. Creamy avocados are filled with a zesty mix of black beans, corn, tomatoes, and spices for a Tex-Mex twist.

Avocado:

  • 3 ripe avocados, halved and pitted

Cowboy Caviar:

  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn kernels (fresh, canned, or thawed from frozen)
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, seeded and minced
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Mix Cowboy Caviar: In a medium bowl, combine black beans, corn, cherry tomatoes, red bell pepper, red onion, cilantro, and jalapeño.
  2. Prepare Dressing: In a small bowl, whisk together olive oil, lime juice, chili powder, cumin, salt, and pepper.
  3. Toss: Pour the dressing over the veggie mixture and toss well to coat.
  4. Fill Avocados: Spoon the cowboy caviar into the centers of each avocado half, mounding it over the top.
  5. Serve: Serve immediately with extra lime wedges if desired.

Notes

  • For extra protein, add diced grilled chicken or shrimp to the filling.
