Ingredients
Scale
Salmon
- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil (for cooking)
- Salt to taste
- 1/2 teaspoon black pepper
Stuffing
- 1 cup lump crab meat
- 1/2 cup shrimp, peeled and deveined, chopped
- 4 oz cream cheese, softened
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1/2 cup breadcrumbs
- 2 tablespoons fresh dill, chopped (plus extra for garnish)
Instructions
- Prepare the salmon pockets: Carefully slice each salmon fillet horizontally to create a pocket without cutting all the way through. This pocket will hold the stuffing mixture.
- Make the stuffing: In a mixing bowl, combine lump crab meat, chopped shrimp, softened cream cheese, minced garlic, lemon juice, breadcrumbs, chopped fresh dill, black pepper, and salt. Mix gently until well combined.
- Stuff the fillets: Fill each salmon pocket evenly with the crab and shrimp mixture, pressing gently to secure the stuffing inside.
- Sear the salmon: Heat olive oil in a skillet over medium-high heat. Place the stuffed salmon fillets in the skillet and sear for 3-4 minutes on one side until golden brown.
- Finish cooking in the oven: Preheat your oven to 375°F (190°C). Flip the seared fillets carefully, then transfer the skillet to the oven. Bake for 10-15 minutes or until the salmon is cooked through and flakes easily with a fork.
- Rest and serve: Remove the skillet from the oven and let the salmon rest for a few minutes to redistribute juices. Garnish with additional fresh dill and serve warm.
Notes
- Ensure salmon fillets are fresh for the best flavor and texture.
- If you prefer, substitute breadcrumbs with crushed crackers for a different texture.
- Be careful not to over-stuff the salmon fillets to avoid bursting during cooking.
- Use a cast-iron or oven-safe skillet for an easy transfer from stove to oven.
- This dish pairs well with steamed vegetables or a light salad.
