Description

This Crab and Shrimp Stuffed Salmon recipe is an elegant and delicious dish that combines succulent salmon fillets with a savory seafood stuffing of crab meat, shrimp, and cream cheese, enhanced with fresh dill and zesty lemon. Perfect for impressing guests or a special family dinner, the salmon is first seared to lock in flavor and finished in the oven for a tender, flaky texture.

Ingredients

Scale

Salmon

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil (for cooking)
  • Salt to taste
  • 1/2 teaspoon black pepper

Stuffing

  • 1 cup lump crab meat
  • 1/2 cup shrimp, peeled and deveined, chopped
  • 4 oz cream cheese, softened
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1/2 cup breadcrumbs
  • 2 tablespoons fresh dill, chopped (plus extra for garnish)

Instructions

  1. Prepare the salmon pockets: Carefully slice each salmon fillet horizontally to create a pocket without cutting all the way through. This pocket will hold the stuffing mixture.
  2. Make the stuffing: In a mixing bowl, combine lump crab meat, chopped shrimp, softened cream cheese, minced garlic, lemon juice, breadcrumbs, chopped fresh dill, black pepper, and salt. Mix gently until well combined.
  3. Stuff the fillets: Fill each salmon pocket evenly with the crab and shrimp mixture, pressing gently to secure the stuffing inside.
  4. Sear the salmon: Heat olive oil in a skillet over medium-high heat. Place the stuffed salmon fillets in the skillet and sear for 3-4 minutes on one side until golden brown.
  5. Finish cooking in the oven: Preheat your oven to 375°F (190°C). Flip the seared fillets carefully, then transfer the skillet to the oven. Bake for 10-15 minutes or until the salmon is cooked through and flakes easily with a fork.
  6. Rest and serve: Remove the skillet from the oven and let the salmon rest for a few minutes to redistribute juices. Garnish with additional fresh dill and serve warm.

Notes

  • Ensure salmon fillets are fresh for the best flavor and texture.
  • If you prefer, substitute breadcrumbs with crushed crackers for a different texture.
  • Be careful not to over-stuff the salmon fillets to avoid bursting during cooking.
  • Use a cast-iron or oven-safe skillet for an easy transfer from stove to oven.
  • This dish pairs well with steamed vegetables or a light salad.
