Description

Ingredients

Dry Pasta:

142g dry spaghetti or pasta shells

Vegetables:

1 tsp olive oil, 3 cups broccoli florets (about 273g), 1 medium onion (110g), 2 cloves garlic

Sauce:

1/4 cup low-sodium vegetable broth, 4 oz cream cheese, 1/4 tsp honey, 1 tsp lemon juice, dash salt, dash pepper, 1/2 tsp crushed red-pepper flakes, optionally 2-3 Tbsp butter, 1 1/4 cup half-and-half, 1/3 cup grated Parmesan cheese


Instructions

  1. Cook Pasta: Cook pasta per package until al dente.
  2. Sauté Vegetables: Heat olive oil in a pan. Sauté onion and garlic, then add broccoli and cook until softened.
  3. Make Sauce: Add cream cheese and broth, stirring until smooth. Add half-and-half for a richer sauce.
  4. Combine: Add pasta to sauce, adjusting creaminess with pasta water.
  5. Season and Serve: Stir in lemon juice, honey, Parmesan, salt, pepper, and red-pepper flakes. Serve garnished with Parmesan.
