Description

This Creamy Avocado Green Goddess Pasta is a vibrant, healthy, and quick meal perfect for busy weeknights. Featuring a luscious avocado-basil sauce blended with fresh garlic, lemon juice, and Parmesan cheese, this dish offers a creamy texture without the heaviness of traditional cream-based sauces. Tossed with al dente spaghetti, it’s a refreshing take on pasta that’s both nutritious and satisfying.

Ingredients

Scale

For the Pasta

  • 8 oz spaghetti or fettuccine
  • Salt, to taste (for boiling water)

For the Sauce

  • 2 ripe avocados
  • 1 cup fresh basil leaves
  • 2 garlic cloves
  • 2 tbsp freshly squeezed lemon juice
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente, typically 8-10 minutes. Reserve 1/4 cup of the pasta cooking water before draining the pasta.
  2. Prepare the Avocado Sauce: While the pasta cooks, place the ripe avocados, fresh basil leaves, garlic cloves, freshly squeezed lemon juice, grated Parmesan cheese, and extra virgin olive oil into a blender. Blend until the mixture is smooth and creamy, forming a vibrant green sauce.
  3. Toss Pasta with Sauce: Return the drained pasta to the pot and place over low heat. Pour in the avocado sauce and toss thoroughly to coat the noodles evenly. Add the reserved pasta water gradually as needed to loosen the sauce and achieve a creamy consistency that clings beautifully to the pasta.
  4. Season and Serve: Season the pasta with salt and freshly ground black pepper to taste. Serve immediately, garnished with extra basil leaves or additional Parmesan cheese if desired for an elegant finish.

Notes

  • Use ripe avocados for the creamiest sauce; underripe avocados will result in a less smooth texture.
  • Reserve pasta water is essential to adjust the sauce consistency without diluting the flavor.
  • Add extra garlic or lemon juice if you prefer a more pronounced flavor profile.
  • Can be served warm or at room temperature for a refreshing summer dish.
  • To make it vegan, substitute Parmesan with a vegan cheese alternative.
