Ingredients
Scale
Lasagna Rolls
- 9 lasagna noodles
- 2 cups cooked chicken, shredded
- 1 1/2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Sauce & Topping
- 2 cups Alfredo sauce
- Fresh parsley for garnish
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the lasagna rolls.
- Cook Noodles: Boil the lasagna noodles according to the package instructions until they are al dente. Drain the noodles and set them aside to cool slightly.
- Prepare Filling: In a large mixing bowl, combine the shredded cooked chicken, ricotta cheese, 1/2 cup shredded mozzarella cheese, 1/4 cup grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
- Assemble Rolls: Lay one cooked lasagna noodle flat and spread a generous amount of the chicken and cheese mixture evenly along its length. Carefully roll up the noodle and place it seam side down in a prepared baking dish. Repeat this process with all noodles and filling.
- Add Sauce and Cheese: Pour the Alfredo sauce evenly over the rolled noodles in the baking dish. Sprinkle the remaining 1/2 cup mozzarella cheese and 1/4 cup Parmesan cheese over the top.
- Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes to allow the flavors to meld and the sauce to heat through.
- Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes, or until the cheese on top is bubbly and lightly browned.
- Garnish and Serve: Remove from the oven, garnish with freshly chopped parsley, and serve warm for a delicious, creamy meal.
Notes
- Ensure noodles are cooked al dente to prevent them from becoming mushy during baking.
- You can substitute rotisserie chicken for convenience.
- For a lighter version, use low-fat cheeses and Alfredo sauce.
- This dish can be prepared a day ahead and refrigerated before baking; just increase baking time slightly if baking cold.
- Leftovers store well in the refrigerator for up to 3 days and reheat nicely in the oven.
