Potatoes

  • 800g uncooked potatoes, cubed
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp mixed herbs
  • 1 tsp chili flakes
  • 1 tsp paprika
  • Optional: Olive oil or cooking spray

Sauce and Toppings

  • 120ml milk (any type)
  • 100g light cream cheese (Philadelphia Lightest)
  • 40g grated Parmesan cheese
  • 50g shredded mozzarella or any low-fat cheese
  • Extra seasoning: salt, garlic, mixed herbs (to taste)
  • Fresh parsley for garnish


Instructions

  1. Preheat and cook potatoes: Preheat your air fryer or oven to 200°C (400°F). Toss the cubed potatoes with salt, garlic powder, mixed herbs, chili flakes, paprika, and optionally a drizzle of olive oil or a spray of cooking spray. Cook in the air fryer for 18-20 minutes or in the oven for 20-23 minutes until the potatoes are golden and crispy.
  2. Prepare the chicken: While the potatoes are cooking, heat olive oil in a pan over medium heat. Add the cubed chicken, seasoned with minced garlic, onion powder, mixed herbs, chili flakes, paprika, and salt. Sauté the chicken for 5-6 minutes until fully cooked and browned on the outside.
  3. Create the creamy sauce: Reduce the heat to low. Add the milk and light cream cheese to the cooked chicken in the pan. Stir continuously until the cream cheese melts and the sauce becomes smooth and creamy, coating the chicken evenly.
