Ingredients
Scale
Chicken & Seasonings
- 1 ½ lb Springer Mountain Farms chicken breast
- 1 ½ teaspoon paprika (OliveNation)
- 1 ½ teaspoon oregano
- 1 teaspoon garlic powder (OliveNation)
- ½ teaspoon thyme
- ½ teaspoon black pepper
- ½ teaspoon salt
Pasta
- 12 oz gluten-free farfalle pasta
- ¼ cup reserved pasta water
Sauce
- 4 tablespoon butter
- 2 teaspoon dry shallots
- 2 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 2 tablespoon Gluten-Free 1:1 Flour
- ½ cup chicken broth
- 3 cups heavy cream
- 12 oz shredded parmesan cheese
- ½ teaspoon salt
- 2 tablespoon olive oil (Costabile Brand)
Instructions
- Boil Pasta: Cook the gluten-free farfalle pasta in a large pot of boiling salted water according to the package instructions until al dente. Reserve ¼ cup of the pasta water before draining the pasta.
- Season Chicken: In a small bowl, combine paprika, oregano, garlic powder, thyme, salt, and black pepper. Pound the chicken breasts evenly to ensure uniform cooking, then season both sides generously with the spice mixture.
- Sear Chicken: Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts and sear until golden brown and cooked through, about 5-7 minutes per side depending on thickness. Remove from skillet and let rest before slicing.
- Prepare Sauce: In the same skillet, melt the butter over medium heat. Add dry shallots, garlic powder, and Italian seasoning, sautéing briefly until fragrant. Stir in the gluten-free flour to create a roux, cooking for 1-2 minutes. Gradually whisk in chicken broth and heavy cream, stirring constantly to avoid lumps. Allow the sauce to simmer gently until it thickens. Stir in shredded parmesan cheese and season with salt to taste. If the sauce is too thick, add reserved pasta water to reach desired consistency.
- Combine: Add the cooked pasta to the sauce and toss to coat thoroughly. Slice the rested chicken breasts and arrange on top or mix into the pasta. Serve immediately while hot for the best creamy texture and flavor.
Notes
- To ensure the chicken cooks evenly, pound it to an even thickness before seasoning.
- Reserve pasta water to adjust the sauce consistency, as gluten-free flour may thicken the sauce more than regular flour.
- Use freshly shredded Parmesan cheese for optimal flavor and better melting.
- For extra garlic flavor, you can add minced fresh garlic when sautéing the shallots.
- Make sure not to overcook the pasta to maintain the ideal al dente texture that holds well with the creamy sauce.
