- ½ cup breadcrumbs
- 1 egg

- ¼ teaspoon black pepper
For the Sauce:
- 2 tablespoons olive oil
- 1 tablespoon butter
- 8 ounces mushrooms, sliced
- ½ cup chicken broth
- 1 cup heavy cream
- ½ teaspoon Dijon mustard
- Fresh parsley for garnish (optional)
Instructions
- Prepare the Meatballs: In a large bowl, mix ground chicken, breadcrumbs, egg, Parmesan, garlic, Italian seasoning, salt, and pepper until well combined. Form into 1½-inch meatballs.
- Cook the Meatballs: Brown the meatballs in olive oil in a skillet until cooked through. Remove and set aside.
- Make the Sauce: In the same skillet, cook mushrooms in butter until browned. Add broth, cream, and Dijon mustard. Simmer until thickened.
- Combine and Serve: Return meatballs to the skillet, coat with sauce, and simmer. Garnish with parsley and serve.
