Main Soup:

- 5 medium russet potatoes, peeled and diced

- 1 cup whole milk
- 1 cup heavy cream
- 1/2 cup sour cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 cup shredded cheddar cheese
Toppings:
- 4 slices cooked bacon, crumbled
- 2 tablespoons chopped green onions or chives
Instructions
- Saute Aromatics: In a large pot, melt the butter over medium heat. Add the diced onion and cook until softened, about 5 minutes. Stir in the garlic and cook for another 1 minute.
- Create Roux: Sprinkle in the flour and stir constantly for 1–2 minutes to form a roux. Slowly whisk in the broth until smooth, then add the diced potatoes.
- Cook Soup: Bring to a boil, then reduce heat to a simmer and cook for 15–20 minutes, or until the potatoes are very tender. Mash some of the soup for texture.
- Finish Soup: Stir in milk, cream, sour cream, salt, pepper, and thyme. Simmer for 5 minutes. Add cheese and stir until melted.
