Sweet Potato Fritters:
- 1 medium sweet potato (peeled and grated)
- 1 can (15 oz) chickpeas (drained and rinsed)
- 1/4 cup all-purpose flour
- 1/4 cup finely chopped red onion
- 2 cloves garlic (minced)
- 1 large egg
- 2 tablespoons chopped fresh parsley
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 2–3 tablespoons olive oil (for frying)
Instructions
- In a large bowl, mash the chickpeas with a fork or potato masher, leaving some texture.
- Add the grated sweet potato, flour, red onion, garlic, egg, parsley, cumin, paprika, cayenne (if using), salt, and pepper.
- Mix well until combined. Form the mixture into small patties, about 2 inches wide.
- Heat olive oil in a large skillet over medium heat.
- Once hot, add the fritters in batches, making sure not to overcrowd the pan.
- Cook for 3–4 minutes per side or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain.
- Serve warm with yogurt sauce, tahini dressing, or your favorite dip.
Notes
- You can make these fritters gluten-free by substituting the flour with chickpea flour or a gluten-free blend.
- To bake instead of fry, place patties on a lined baking sheet, spray lightly with oil, and bake at 400°F (200°C) for 20–25 minutes, flipping halfway through.
