Instructions
- Preheat Oven: Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- Boil Sweet Potatoes: Boil the sweet potatoes whole in salted water for about 15–20 minutes until fork-tender. Drain and cool slightly.
- Smash Potatoes: Transfer sweet potatoes to the baking sheet and gently smash each one until about 1/2 inch thick.
- Season and Roast: Mix olive oil, garlic powder, smoked paprika, salt, and pepper. Brush the sweet potatoes with the seasoned oil. Roast for 25–30 minutes until crispy.
- Finish and Serve: Sprinkle with parsley and flaky sea salt if desired. Serve warm.
