Beef:
- 3–4 lbs beef chuck roast
Chipotle Mix:
- 1–2 chipotle peppers in adobo sauce, finely chopped
- 1 tablespoon adobo sauce
- 1 tablespoon tomato paste
- 1 cup beef broth
- 1 medium onion, sliced
- 4 cloves garlic, minced
- 1 tablespoon apple cider vinegar
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Sear the Beef: Heat olive oil in a skillet, season beef with salt and pepper, sear on all sides until browned.
- Mix Chipotle Ingredients: Combine beef broth, chipotle peppers, adobo sauce, tomato paste, vinegar, cumin, paprika, oregano, and garlic.
- Prepare Crockpot: Add sliced onions to the crockpot, place seared beef on top, pour chipotle mixture over everything.
- Cook: Cook on low for 8–10 hours or high for 4–5 hours until beef is tender.
- Shred and Serve: Shred beef, return to crockpot, stir to coat. Serve warm.
