  • 1 red bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup low-sodium chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 can (15 oz) cannellini or kidney beans, drained and rinsed

Instructions

  1. Brown Sausage: Heat olive oil in a skillet over medium heat. Brown sausage pieces on all sides for 5–6 minutes. Transfer to crockpot.
  2. Sauté Vegetables: In the same skillet, sauté onion, garlic, carrots, celery, and bell pepper for 3–4 minutes. Add to crockpot.
  3. Add Ingredients: Add diced tomatoes, chicken broth, tomato paste, thyme, paprika, oregano, and beans. Stir to combine.
  4. Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours until vegetables are tender.
