  • 200 g wide wheat noodles (hand-pulled or store-bought)

Seasonings and Vegetables:

  • 1½ tablespoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon chili flakes (adjust to taste)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 spring onions, sliced
  • 1 red bell pepper, thinly sliced (optional)
  • 1½ tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon rice vinegar

Instructions

  1. Cook the noodles: Cook the noodles according to package directions, drain, toss with a little oil, and set aside.
  2. Stir-fry the lamb: Brown the lamb in a hot wok, then set aside.
  3. Prepare the seasonings: Stir-fry garlic, ginger, chili flakes, cumin, and coriander until fragrant.
