Lamb and Noodles:
- 250 g lamb shoulder or leg, thinly sliced against the grain
- 200 g wide wheat noodles (hand-pulled or store-bought)
Seasonings and Vegetables:
- 2 tablespoons vegetable oil
- 1½ tablespoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon chili flakes (adjust to taste)
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 spring onions, sliced
- 1 red bell pepper, thinly sliced (optional)
- 1½ tablespoons light soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
Garnish:
- Fresh cilantro for garnish
- Salt and pepper to taste
Instructions
- Cook the noodles: Cook the noodles according to package directions, drain, toss with a little oil, and set aside.
- Stir-fry the lamb: Brown the lamb in a hot wok, then set aside.
- Prepare the seasonings: Stir-fry garlic, ginger, chili flakes, cumin, and coriander until fragrant.
- Add vegetables: Stir-fry bell pepper and spring onions until softened.
- Combine ingredients: Return lamb and noodles to the wok, add soy sauces, vinegar, and sugar. Toss to coat.
- Season and finish: Adjust seasoning with salt and pepper, stir-fry until heated through. Garnish with spring onions and cilantro.
Notes
- For authentic Xi’an-style chew, use hand-pulled or biang biang noodles.
- Adjust cumin and chili flakes for desired spice level.
- This dish works great with leftover roast lamb as well.
