Mashed Potato Mixture:
- 2 cups mashed potatoes (cooled)
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- ¼ cup shredded mozzarella cheese
- 2 tablespoons chopped fresh parsley
- ½ teaspoon salt
- ¼ teaspoon black pepper
Coating:
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- Oil for frying
Instructions
- Prepare the Mashed Potato Mixture: Melt butter in a skillet, sauté garlic until fragrant. Mix with mashed potatoes, Parmesan, mozzarella, parsley, salt, and pepper.
- Form the Potato Balls: Roll the mixture into small balls.
- Coat the Potato Balls: Set up a dredging station with flour, eggs, and breadcrumbs. Coat each potato ball in flour, dip in egg, then roll in breadcrumbs.
- Fry the Potato Pops: Heat oil, fry the coated potato balls until golden brown and crispy.
- Serve: Drain on paper towels and serve warm with dipping sauce.
Notes
- These can also be baked at 400°F (200°C) for 20–25 minutes for a lighter version.
- Add a pinch of chili flakes to the potato mixture for a spicy kick.
