- 1/4 cup Toasted sesame seeds (plus extra for topping)
Chocolate Coating
- 4 oz 70% dark chocolate (melted)
- 2 tbsp Coconut oil (for melting the chocolate)
Instructions
- Prepare Date Paste: Add the pitted dates, almond butter, lucuma or maca powder, vanilla extract, and sea salt to a food processor. Blitz for about 2-3 minutes until a smooth, uniform paste forms, resembling a ball.
- Combine Mix-ins: Transfer the date paste to a large bowl. Gently fold in the chopped cashew pieces and toasted sesame seeds until they are evenly distributed throughout the mixture.
- Shape the Mixture: Place the mixture onto a sheet of parchment paper. Use a second sheet of parchment to roll it into a rectangular log roughly 10 inches by 4 inches in size.
- Trim Edges: Neatly cut away any uneven edges from the rectangle. Roll the trimmed pieces back into the dough to maintain a clean, uniform rectangle shape.
- Chill the Log: Place the formed log in the freezer for about 10 minutes to firm up and make it easier to slice.
- Melt Chocolate: In a heatproof bowl set over a saucepan of simmering water, melt the 70% dark chocolate together with the coconut oil, stirring frequently until smooth. Remove from heat once melted.
- Slice Bars: Carefully slice the chilled log into 10 equal bars. Arrange the bars on a baking sheet lined with parchment paper.
- Dip Bars: Dip each bar into the melted chocolate using a fork and spoon to lift them out, ensuring they are evenly coated. Place the coated bars back on the parchment-lined baking sheet.
- Freeze Bars: Freeze the chocolate-coated bars for another 10 minutes to allow the chocolate to set firmly.
- Finish and Garnish: Drizzle any remaining melted chocolate over the bars and sprinkle extra toasted sesame seeds on top before the chocolate fully sets. Let the bars set completely before serving.
