Delightful Badam Katli is a traditional Indian almond barfi that is quick and easy to make. This sweet treat combines blanched almond flour with fragrant cardamom and a smooth, sugary syrup base, resulting in a rich, melt-in-your-mouth dessert. Perfect for festive occasions or a special homemade sweet snack, it can be garnished with edible gold or silver leaf for a festive touch.
Ingredients
Sweet Syrup:
- 1 cup Sugar (Can substitute with jaggery for a richer flavor)
- 1 cup Water (No substitutions needed)
Almond Mixture:
- 2 cups Blanched Almond Flour (Almond meal can be used for a coarser texture)
- 1 teaspoon Almond Extract (Ensure it’s pure for best taste)
- 1 tablespoon Rose Water (Optional for flavor enhancement)
- 1 teaspoon Ground Green Cardamom (Can be swapped with cinnamon or nutmeg)
- 2 tablespoons Ghee (Unsalted butter can be used if necessary)
Garnish (Optional):
- Edible Gold/Silver Leaf (Optional but traditionally used for decoration)
Instructions
- Prepare Sugar Syrup:
In a heavy-based pan, combine the sugar and water. Heat over medium-low heat until the sugar fully dissolves and the syrup becomes clear, ensuring a smooth base for the Katli.
- Add Almond Flour and Flavorings:
Stir in the blanched almond flour, almond extract, rose water (if using), and ground green cardamom to the syrup. Lower the heat and continuously stir the mixture for about 5-7 minutes until it begins pulling away from the sides of the pan.
- Incorporate Ghee:
Add the ghee to the mixture and keep stirring for another 3-5 minutes until it forms a smooth, cohesive dough-like mass that holds shape when rolled into a ball.
- Roll the Mixture:
Transfer the almond mixture onto a piece of wax or parchment paper. Cover it with another sheet and roll it evenly into a rectangle about 1/4 inch thick using a rolling pin.
- Cool and Cut:
Allow the rolled mixture to cool for 5-8 minutes until slightly firm. Then, use a sharp knife to cut into diamond or square shapes.
- Store Properly:
Place the cut Badam Katli pieces in an airtight container and store at room temperature. They stay fresh and delicious for 4-5 days.
- Optional Garnish:
For a traditional and elegant finish, decorate the top of the Katli pieces with edible gold or silver leaf.

- Use blanched almond flour for a smooth texture; almond meal results in a coarser finish.
