Ingredients
Scale
Meat and Seasoning
- 1 lb Lean ground beef
- 1 packet Taco seasoning
- 1 cup Water
Vegetables and Beans
- 1 head Romaine lettuce
- 1 cup Black olives, sliced
- 1 can Black beans, rinsed and drained
- 1 cup Cherry tomatoes, halved
- 3 stalks Green onions, sliced
- 1 bunch Cilantro, chopped
Dairy and Toppings
- 1 cup Shredded cheddar cheese
- 1 cup Sour cream (optional garnish)
Others
- 1 bag Nacho flavored Doritos, crushed
- 1 bottle Catalina dressing (homemade or store-bought)
Instructions
- Cook Ground Beef: In a skillet over medium-high heat, cook the lean ground beef, breaking it apart with a wooden spoon until it’s no longer pink, about 5-7 minutes. Drain any excess fat and return to the heat.
- Season Meat: Sprinkle in the taco seasoning and add the water. Stir to combine and cook for an additional 1 minute until the beef is well seasoned and flavorful.
- Assemble Salad: In a large salad bowl, layer the romaine lettuce, cooked taco meat, sliced black olives, black beans, cherry tomatoes, shredded cheddar cheese, crushed Doritos, and green onions.
- Add Dressing: Pour the Catalina dressing over the salad and gently toss to mix everything, ensuring all the lettuce is well-coated with deliciousness.
- Garnish and Serve: Top your salad with a dollop of sour cream and a sprinkle of fresh cilantro before serving immediately to maximize flavor and freshness.
Notes
- For a lighter version, use low-fat cheese and sour cream or omit the sour cream entirely.
- Choose homemade Catalina dressing for a fresher taste or store-bought for convenience.
- This salad is best served immediately to keep the Doritos crunchy.
- Optional additions include avocado slices or jalapeños for extra flavor and spice.
- If you want to prepare ahead, keep the Doritos and dressing separate until just before serving.
