Instructions
- Preheat the oven: Preheat the oven to 350°F and line baking sheets with parchment paper.
- Cream butter and sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add egg and vanilla: Add the egg and vanilla extract, mixing until combined.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and dry Jello powder.
- Mix wet and dry: Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
- Add food coloring: If desired, add a few drops of food coloring to intensify the cookie color.
- Shape and bake: Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheets. Flatten slightly and decorate with pastel sprinkles. Bake for 8–10 minutes.
- Cool and enjoy: Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
