  • 1 cup basmati or long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil or butter
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ground cumin
  • zest and juice of 1 large lemon
  • 1/4 cup chopped fresh parsley or cilantro
  • salt and black pepper to taste

Instructions

  1. Rinse the Rice: Rinse the rice under cold water until the water runs clear.
  2. Cook the Rice: Bring 2 cups of water to a boil in a medium saucepan. Stir in rice, turmeric, cumin, and a pinch of salt. Cover, reduce heat to low, and simmer for 15–18 minutes until tender.
  3. Finish the Dish: Remove from heat and let sit, covered, for 5 minutes. Fluff the rice, then stir in lemon zest, lemon juice, olive oil or butter, and herbs. Season with salt and pepper. Serve warm.
