  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil

  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika

For the Zucchini:

  • 2 medium zucchinis, sliced into half-moons

For Topping:

  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. Prepare the Chicken and Zucchini: Arrange the chicken breasts in the baking dish and surround them with sliced zucchini. Drizzle with olive oil, sprinkle with garlic, Italian seasoning, paprika, salt, and pepper. Toss gently to coat the zucchini in seasoning.
  3. Bake: Bake uncovered for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  4. Add Cheese: Sprinkle mozzarella and Parmesan cheese over the chicken and zucchini during the last 5 minutes of baking until melted and bubbly.
