Description

This Easy Gazpacho recipe is a refreshing and flavorful cold soup perfect for hot summer days. Made with fresh vegetables and a blend of seasonings, it’s a simple and healthy dish that can be prepared in minutes.

Vegetable Blend:

  • 6 ripe tomatoes (roughly chopped)
  • 1 cucumber (peeled and chopped)
  • 1 red bell pepper (seeded and chopped)
  • 1/2 red onion (chopped)
  • 2 cloves garlic (minced)

Seasonings and Liquids:

  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cold water

Garnish:

  • Fresh chopped parsley or basil for garnish (optional)

Instructions

  1. Blend Vegetables: Add the tomatoes, cucumber, bell pepper, onion, and garlic to a blender or food processor. Blend until smooth.
  2. Add Seasonings: Add the olive oil, red wine vinegar, lemon juice, salt, pepper, and cold water. Blend again until fully combined and smooth.
  3. Chill and Serve: Taste and adjust seasoning if needed. Chill in the refrigerator for at least 1 hour before serving. Stir well and serve cold, garnished with fresh herbs if desired.

Notes

  • For a chunkier texture, blend only half the vegetables and finely dice the rest before mixing together.
