For the churros:
- 1 cup water
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 2 tablespoons unsalted butter
- 1 cup all-purpose flour
- 1 large egg
- 1 teaspoon vanilla extract
- Vegetable oil for frying
For the coating:
- 1/2 cup granulated sugar
- 1 teaspoon ground cinnamon
For the chocolate sauce:
- 1/2 cup heavy cream
- 4 ounces semi-sweet chocolate, chopped
- 1 tablespoon unsalted butter
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan over medium heat, combine water, sugar, salt, and butter, and bring to a boil.
- Reduce heat to low and stir in flour, mixing until a smooth dough forms. Remove from heat and cool for 5 minutes.
- Beat in the egg and vanilla until fully incorporated. Transfer dough to a piping bag with a star tip.
- Heat vegetable oil in a pot to 375°F (190°C). Pipe dough strips into the oil and fry until golden brown.
- Drain on paper towels and coat churros in cinnamon sugar mixture.
- For the chocolate sauce, heat cream until steaming, then stir in chocolate, butter, and vanilla. Serve warm churros with sauce.

- For a crispier texture, fry churros in small batches and maintain oil temperature.
- You can make the dough ahead of time and refrigerate for up to 1 day before frying.
