For the macaron shells:
- 1 cup powdered sugar
- ¾ cup almond flour (finely ground and sifted)
- 2 large egg whites (room temperature)
- ¼ cup granulated sugar
- ¼ teaspoon cream of tartar
- ½ teaspoon vanilla extract or almond extract
- Optional gel food coloring
For the filling:
- ½ cup unsalted butter (softened)
- 1 cup powdered sugar
- 1–2 tablespoons heavy cream or milk
- ½ teaspoon vanilla extract
Instructions
- Prepare the macaron shells: Line baking sheets with parchment paper. Pulse powdered sugar and almond flour, sift into a bowl. Beat egg whites with cream of tartar and sugar until stiff peaks form. Fold in dry ingredients and pipe circles onto sheets. Let shells rest, then bake and cool.
- Make the filling: Beat butter until creamy, add powdered sugar, vanilla, and cream. Pipe or spread onto half of the macaron shells and sandwich with the remaining halves. Chill before serving.
