  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 8 small flour or corn tortillas, cut into quarters
  • 2 cups shredded cheddar cheese, divided
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream for serving (optional)

Instructions

  1. Preheat oven and prepare filling: Preheat oven to 375°F (190°C). In a skillet, sauté onion and bell pepper. Add garlic and meat, then season with taco seasoning. Mix in beans, corn, and tomatoes.
  2. Assemble the casserole: Layer tortillas, meat mixture, and cheese in a baking dish. Repeat layers.
  3. Bake: Cover with foil and bake for 20 minutes. Uncover and bake for an additional 5 minutes until cheese is melted.
