Quick to prepare and perfect for patriotic holidays or any party, these cookies are as fun to make as they are to eat.

Ingredients

Scale

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 1/2 cups powdered (confectioners’) sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract

Icing Ingredients

  • 2 teaspoons meringue powder
  • 4 tablespoons warm water
  • 1 teaspoon pure vanilla extract
  • 3 1/2 cups powdered sugar, sifted
  • Blue gel food coloring, as needed
  • Red gel food coloring, as needed

Instructions

  1. Preheat the Oven: Set your oven to 400 °F (200 °C) and prepare baking sheets by lining them with parchment paper to prevent sticking and ensure even baking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set this mixture aside to be incorporated later into the dough.
  3. Cream Butter and Sugar: Using an electric mixer, beat the room temperature unsalted butter and powdered sugar until the mixture becomes light and fluffy, which helps create a tender cookie texture.
  4. Add Egg and Vanilla: Beat in the large egg and pure vanilla extract to the butter-sugar mixture until fully combined, adding moisture and flavor to the dough.
  5. Combine Wet and Dry Ingredients: Gradually add the flour mixture into the wet ingredients, mixing slowly until just combined to avoid overworking the dough and ensuring tender cookies.
  6. Roll and Cut Dough: Roll out the dough on a lightly floured surface to about 1/4-inch thickness. Use star-shaped cookie cutters to cut out shapes, then transfer them carefully onto the prepared baking sheets. Chill the dough for 20 minutes if needed to prevent spreading during baking.
  7. Bake Cookies: Bake the cookies in the preheated oven for 7–8 minutes, until the edges are set but centers remain soft. Remove from oven and let cool on the baking sheets for 2 minutes before transferring to a wire rack to cool completely.
  8. Prepare White Royal Icing: In a clean bowl, beat meringue powder with warm water until foamy. Add vanilla extract and sifted powdered sugar, then whip until soft peaks form. Add small amounts of water if needed to achieve desired consistency for outlining and flooding.
  9. Icing Base Layer: Use white royal icing to outline and flood each cooled cookie. Let the icing dry completely to form a firm surface for decoration.
  10. Add Firework Designs: Divide remaining icing into two portions. Tint one with red gel food coloring and the other with blue. Using piping bags fitted with small round tips, pipe intricate firework patterns over the white icing. Allow cookies to dry completely before serving or storing.

Notes

  • Chilling the dough before baking helps prevent spreading and keeps the cookie shapes crisp.
  • Use gel food coloring to avoid altering icing consistency.
  • Ensure cookies are completely cooled before icing to prevent melting or running.
  • Store decorated cookies in an airtight container at room temperature for up to one week.
  • Royal icing dries best at room temperature away from humidity.
