- 1 whole gutted and cleaned fish (sea bass or salmon)
- 2 tablespoons olive oil (vegetable oil can be a substitute)
- 1 teaspoon salt
- 1 tablespoon ginger (can substitute with garlic)
- 4 cloves garlic (minced)
- 1 medium bell pepper (any color works)
- 1 small onion (yellow or red onion are good alternatives)
- 2 stalks green onion (chopped)
- 1 teaspoon paprika (smoked paprika adds depth)
- 1 teaspoon black pepper (adjust according to taste)
- 1 teaspoon oregano (thyme can be used as a substitute)
- 1 tablespoon Knorr seasoning (use any all-purpose seasoning if needed)
- 1/4 cup fresh parsley (chopped)
For Serving
- 1 cup onion wedges
- 2 slices lemon
Instructions
- Preparation: Ensure the whole fish is gutted, cleaned, and patted dry with paper towels. Make several diagonal slits on both sides of the fish to allow the marinade to penetrate deeply.
- Make Marinade: In a food processor, blend together ginger, garlic, bell pepper, parsley, green onion, and onion until smooth. Add olive oil and then mix in salt, paprika, black pepper, oregano, and Knorr seasoning to create a flavor-packed marinade.
- Marinate the Fish: Rub the marinade generously all over the fish, making sure to get it into the slits and inside the cavity. Cover the fish with plastic wrap and refrigerate, letting it marinate for about 1 hour for maximum flavor infusion.
- Preheat the Oven: About 10 minutes before cooking, preheat your oven to 400°F (200°C) to ensure it’s hot and ready for roasting.
- Roast the Fish – First Side: Apply a bit more marinade on the fish, mist it lightly with oil to maintain moisture, then place it in the oven. Roast the fish for 10-15 minutes.
- Flip and Roast – Second Side: Carefully flip the fish over, baste with remaining marinade to keep it juicy and flavorful, then roast for another 10-15 minutes until the fish is cooked through and reaches an internal temperature of 145°F (63°C).
- Serve: Remove the fish from the oven and immediately serve with fresh onion wedges and lemon slices for a bright, zesty complement that enhances the roasted flavors.
Notes
- You can substitute ginger with additional garlic if preferred.
- Smoked paprika adds a deeper smoky flavor but regular paprika works well too.
- If sea bass or salmon is unavailable, you may use any firm white fish suitable for roasting.
- The internal temperature of 145°F ensures the fish is perfectly cooked and safe to eat.
- Marinating longer than 1 hour is possible but may start to cure the fish; avoid exceeding 2 hours.
- Use fresh herbs and vegetables in the marinade for the best flavor.
- For a spicier variation, add a pinch of chili flakes to the marinade.
- Ensure the fish is fully dry before marinating to help the marinade adhere better.
