Pie Crust:

- 1 tablespoon olive oil
- ½ cup diced onion
- ½ cup diced green bell pepper
- 1 clove garlic, minced
- 1 pound medium shrimp, peeled, deveined, and chopped
- ½ teaspoon Old Bay seasoning
- ¼ teaspoon cayenne pepper (optional)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 3 large eggs
- ½ cup whole milk
- ½ cup heavy cream
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven: Preheat the oven to 375°F. Place the pie crust in a 9-inch pie dish and prick the bottom with a fork. Set aside.
- Sauté vegetables and shrimp: In a skillet, heat olive oil and sauté onion and bell pepper until softened. Add garlic, then stir in shrimp, Old Bay seasoning, cayenne pepper, salt, and black pepper. Cook until shrimp start to turn pink.
- Prepare filling: In a mixing bowl, whisk together eggs, milk, and cream. Stir in the cooked shrimp mixture, cheese, and parsley.
- Fill and bake: Pour the filling into the pie crust. Bake for 35–40 minutes until set and golden. Let cool before serving.
